Catching all 3 at once? That would be rediculous, but Game Freak would probably do this, and render Kyurem unable to be shiny in the process, unless of cource they choose to reverse the shiny check in Game 3, which i doubt they will do, because they chose to program it in the first place. I wouldnt count on Gray being the name, since when has game freak gone with logic in naming their third games? Gold and Silver's third was Crystal, and Diamond and Pearl's was Platinum, I dont think people were expecting that.
